I personally use a Nikon D100 and I don't ever care for Nikon's 'flavor' of

Photoshop, off my Nikon's CompactFlash card, I systematically assign Adobe's
'flavor' of sRGB, the one labeled IEC61933-2.1, and nothing else.

Well, you can't assign the above-mentioned sRGB profile to a Nikon NEF, which is by definition profile-less.

I don't want to fight Nikon eXif or whathever. I don't have time for that.
???
When I use NEF, I use Abobe's CameraRAW and choose to render as either Adobe's
sRGB, ProPhoto or AdobeRGB.
Fine.

But I have to say, in all fairness, that since I
always capture in sRGB, on the camera, I don't see a reason to change the
profile thereafter. So I just re-tag the image with "sRGB IEC61933-2.1".

Well, if you "always capture in sRGB, on the camera" then you're not shooting NEFs. The NEF raw data is not rendered into a color space until it is processed, which is a decision made in the RAW software, e.g. Nikon Capture, Adobe Camera RAW, etc. There is nothing inherently wrong with the Nikon profiles. The Nikon Adobe RGB (1998) is essentially identical to the Adobe profile, with the exception of the missing Media Black Point, which is inconsequential. (I do assign the "real" Adobe profile to files I send out to prevent confusion.) You may not like the colors that Nikon produces when they render the raw data into a particular color space (e.g., one of their "flavors" of sRGB), but the profiles themselves are ok. Just as there are different films with different color characteristics, different RAW software (or internal camera software) gives different "looks" which may or may not suit your needs/style.

I also have a miserable time with Adobe Camera RAW and have preferred the rendering and output of Nikon's Capture. I also can't stand the overall design of Nikon's software, which plain and simple sucks. Many photographers prefer Phase One's Capture One raw processing. Your milage may vary! BTW, I don't think the Coolpix will shoot RAW files anyway, so you must choose one of the built-in Nikon profiles. I haven't compared the sRGB profiles that Nikon embeds in JPEG files, but I doubt they differ much from sRGB IEC61933-2.1. The differences are in the rendering into that color space. Thus, re-tagging the image as you suggest likely won't change the colors.
