Yeah - Adobe's Camera Raw sucks.

Use the free Nikon View software if you don't want to be stuck with Adobe's
two options: Noise or Mush.

Take the Camera Raw Challenge - nobody has managed to get Camera Raw to do a
better conversion yet.

Not that I'm a big fan of the Nikon software either. The AppleScript
dictionaries are some kind of joke (the Edit software has the Capture
commands) and the user interfaces are truly awful.

So I do wish that Adobe would get their act together and make ACR a little
more controllable.
