Illustrator & Acrobat

A quick question about Acrobat reader color management. As I understood it
acrobat would respect profiled embedded in placed files, however the
following confuses me.

I prepare an image in Photoshop CS in RGB then convert it to Euroscale
Coated V2, I then place the image in to an Illustrator 10 document, which
respects the profile and the colors match. Which is something that does not
happen in Illustrator CS.

However when I save the Illustrator document as a PFD and embed the
Euroscale profile, it displays in Acrobat and Acrobat reader consistently
too saturated.

Then when I re-open the PDF in Illustrator it claims to have no profile
embedded.

Any advice would be appreciated.
