You are right, out of gamut colors are clipped to the boundary of the
Destination gamut... but there are dozens of ways of doing that!
How to treat out of gamut colors in the colorimetric intent is not
addressed in the ICC spec, and it's left up to the profile
generation tool. It does make a difference when evaluating printed
images for proofing, though.

So, if I create a synthetic Lab image that does not contain ANY out of gamut
colors for a given printer, are you saying that I should not see ANY
differences between Colorimetric Intent from different profiler?

Well, I was referring to out-of-gamut colors, and the variety of ways
in which they can be forced to fit in the device gamut (gamut mapping).
Now you are talking about in-gamut colors. And my answer is: you
will see differences depending on the profiler; or even for the same
profiler, depending on the settings used.
Not colorimetric differences (the L*a*b* shouldn't change), but
differences based on the strategy adopted by the profiler to
obtain that L*a*b* from, say, CMYK inks (color separation).
This is what you obtain with different GCR settings, for instance.
