All those pixels have actually been filtered through differing color filters; that is to say, many of the values in the red channel raw data have green or blue filters over them, not red ones. The goal is to get the best compromise color values for each pixel, as if it had the correct color filter on it. There might well be a different optimal algorithm for converting to black and white, but I suspect it would still fall short of what could be captured if the varying color filters weren't involved.
