I'm not sure how detrimental it would be to a shot of a camera target, but
in normal usage, depending on the image, you might be throwing away tons of
data by forcing the conversion to such a small color space. As long as
you'll be using that exact same conversion process on every image you shoot,
including cramming them all into sRGB, then the profile should remain
technically valid. Otherwise, switch to whatever color space you intend to
use normally when you do the raw conversion and use that to make your
profile.
Camera profiling at this point in time is not an exact science by any means.
Someone with more Phase One experience than I may have some better
suggestions for you.
