Yes. Supply both your physical IT8.7/1 and /2, and your CMYK targets.

Provided they always scan your images the same way that should provide you
with a sensible starting point for further color editing.

Big question, indeed. But you could always convert to your Cromalin profile,
after all, no?

Not to worry. Everything still remains in Cromalin space. But if was you I'd
embedded your Cromalin profile to the file to avoid any ambiguities.
