But it's true that there is such thing as "illuminant metamerism", the
change in color appearance caused by a different source of light which
causes two surface colors not to match anymore.

Yes, there is. In fact, the CIE has defined a metric for the condition called the "Special Metamerism Index: Change in Illuminant", documented in CIE Publication 15.2 "Colorimetry".
