If it's already in sRGB, there's nothing to be gained by the conversion alone. The images will not have a larger gamut as a result. Only advantage would be further editing "headroom" should you choose to increase saturation or whatever. But you should consider moving the images to 16bit/channel should you choose to edit in that space.


Assigning a new profile, ProPhoto?

Assigning will take the existing "sRGB" RGB values and re-map them to the extents of the ProPhoto space. In my view that would probably give you disasterous results especially in things like fleshtones where they would likely come very red and over-saturated.

I'd leave it alone. Since the images are in sRGB already, there's virtually nothing to be gained. If you're coming from RAW to sRGB, you could consider a switch to ProPhoto but if you're taking them direct from the camera as JPEGs/TIFFs it would be of little value.
