Or ... you could just open in Acrobat
          print to "Adobe PDF"
          and select Composite Gray with an appropriate profile.

Sure, you could use PDF Enhancer or PitStop Pro to do this.

Is there an easy way to remove all color from a PDF file (RGB -> grey
& CMYK -> grey) ?
The resulting PDF file is merged with some color pages for final
output on a laser printer.
I tried ColorSync tools from OS X 10.4.8 already. It converts to RGB
grey instead of black
halftones, which creates problems with one of our printers.
