Thanks to all who send tips and information. This last one from Marco
Ugolini really does the trick if you need to do it only now and then:
You will find the command in Acrobat 7 Professional under Tools >
Print
Production > Convert Colors.
Once there, choose "Action: Convert", and in "Profile" (in the
"Destination
Space" of the dialog box) choose a grayscale profile -- like, for
example,
Gray Gamma 2.2.
Other solutions like PitStop and several automated color servers do
more than just this and well worth a try for production environments.
Many thanks for a nice chat with Elie from Alwan Color and his
recommendations. They have a very nice tool on their web site for all
who need more than the gamut warning from Adobe PS provides. You can
view single colors and images at the same time in source and
destination color space and have a separate view displaying delta E
for about each pixel:
