Yes, you will find the command in Acrobat 7 Professional under Tools > Print
Production > Convert Colors.
Once there, choose "Action: Convert", and in "Profile" (in the "Destination
Space" of the dialog box) choose a grayscale profile -- like, for example,
Gray Gamma 2.2.
