It would appear that InDesign is taking an odd approach to L*a*b*
values for PANTONE colors. Rather than beginning with L*a*b* values
and generating CMYK equivalents, it seems that InDesign is taking the
CMYK values and running those back through the document profile and
generating L*a*b* values.
The CMYK values stay the same, regardless of the document profile.
The L*a*b* values change depending on the document profile.
Can anyone confirm or deny that this is how InDesign is built?
