I've been color managing a number of highly eccentric (and highly challenging) printing process for almost a decade. I have got clients that print onto wood, glass, metal, silk, one that prints with his own blood and one that actually laminates inkjet prints with melamine (think digitally imaged Formica).

I was talking to someone recently who has to create profiles for a 3D printer (ie. a printer that creates 3D objects). It uses inkjet technology, and the interesting thing is that they have to work with a 100% ink limit (actually, it has to be 100% all the time, so a clear "ink" makes up the total when added to the CMY). Needless to say, the gamut is a bit limited, but some profile is better than no profile.
