I haven't been able to establish what exactly is wrong with Photoshop's
Gamut Warning command, but I have learned not to trust it because it simply
doesn't work as advertised.
Someone else with an engineering background could possibly explain to us why
this is, but Gamut Warning is a broken tool.
Again, all I can say is: don't trust it. ColorThink is a far better tool to
assess gamut differences between input and output, though it's not exactly
as convenient as a non-broken Gamut Warning command would be within
Photoshop: it requires the purchase of additional software, plus an
additional separate procedure to perform the comparison.
It would be nice to have a reliable tool inside Photoshop that performs as
well and as precisely as ColorThink does, but, as far as I know, that is not
the case quite yet. Maybe one day Adobe will see fit to fix Gamut Warning
(or...not!).
Regards.
