I think you'll find that the answer is that they don't. You're analysis of the physics of the display is correct. There is really only one adjustment possible on an LCD, backlight adjustment. Everything else (ie. "Contrast", "Offset adjustments" etc.) is all manipulation of the video signal path, to make it appear that there are such adjustments. Whether such things are useful or merely misleading, depends on your point of view.
