The K3 Piezo heads have 8 channels per head for the x800 printers. IF they have dedicated nozzles in the 3800 then why would they need switching at all?. When you change inks the inks are routed to the same nozzles. Canon is the same. It’s only HP that have a dedicated print head.
The advantages are many but here are some reasons why you benefit from separate heads.
The ink load and pigment grind on Matte Black is more prone to plugged nozzles, and or Flocking. Separate heads allow better routine maintenance. They also have a different design specifically for the different pigment size, characteristics of the different inks (Photo Black vs Matte Black).
The possibility of a head strike with extra thick fine art papers show that a user replaceable head at $70 (bi-tone) are justified.
Absolutely no waste on changing. Of course Canon being first to implement inline switching is a very good idea, Epson now following with +/- 1.5ml in one direction of change and 4.5 in the other without cleaning all colours is finally the best they can do.
In the case of the Z3100 the big advantage of printing all blacks on matte media (of course you wouldn’t want to print matte black on photo media) gives just that edge that can be used in the driver or left up to rip vendors to control as they feel their customers desire.

FYI, the new Canon printers like the imagePROGRAF ipf5000 and ipf9000 and smaller printers like PIXMA Pro 9500 actually do have dedicated nozzles for both inks. I use the word "nozzles" because each Canon large format "head" contains dedicated nozzles for 6 inks. Epson has dedicated MK and PK nozzles in the 3800 and 4000 and will have them in their updated printers later this year.
