converting - or what

I read that some say not to do CMYK to CMYK conversions.
I understand about RGB to CMYK
and about going from RGB to CMYK to RGB to CMYK (somewhat)
but ... what if I have a custom press profile I made for my Heidelberg 5 color
and someone sends me files in a CMYK color space. Do I convert it to my press.
If all my graphics (RGB and CMYK) have profiles attached
do I convert to my press - on the fly - coming out of indesign or Acrobat?
I get some files created in Eurostyle color space - quite different from my press.
Am I killing myself doing the CMYK to CMYK conversion?
