To add to the excellent advice from Robert and Marco, I would suggest possibly printing to ISO 12647-2 standard. You could perhaps avoid profiling your press by using the new Fogra 39 based profile from the ECI (see their previous posts a few days ago). When CMYK images created from this (and Gracol G7 and also older Fogra 27L) do start to arrive from customers, there would be no need to do CMYK - CMYK conversions.
