Hi Roger.
The original message mentioned that the files were coming already "in a CMYK
color space," which I took to mean "tagged" and therefore representing a
known and established appearance.
(Which assumes that each of the previous actors in the chain knows exactly
what they're doing, color-management-wise, which may prove to be a whole
other subject in itself.)
Given that premise, I see the conversion to the new printer's custom press
profile as necessary to maintain the original appearance on the output from
the new press.
But I agree that your procedure is useful when the incoming file is "mystery
meat." And also, in any case, the client should be given a reliable color
proof for review before committing to a given choice of conversion
parameters.
