The point of PS Preview is to let you see what will happen before you print it, however there are two ways to use this feature and I believe only one way is appropriate. Option #1 is to view a RGB file in PS Preview and see what will happen to it on various medias. It's a nice feature because you can quickly decide to choose a warmer media to get the best results out of a flesh tone or use a cooler media to give a product shot a bit more pop.
However, prepress users will often view a CMYK file in PS Preview to see how un-transformed CMYK numbers will behave on his proofer and I believe this is an inappropriate use of the technology. I have learned not to trust monitor display of files separated into one color space and assigned another color space. If the prepress user has the freedom to color correct then the prepress user has freedom to re-separate into the color space of his proofer and save themselves the time and expense of retouching.

Isn't the point to not make it look good but instead to reflect what your output will look like so you can take whatever steps possible to make it look as good as possible once it's printed.
