Maybe I'm not following you. Say open a DNG for the first time in LR. You
make some adjustments. You're building a set of instructions. IF you do not
have the Automatically Write XMP preferences on, the instructions are not
placed into the DNG. You would have to have this on OR use the Update
Metadata and DNG command, otherwise, the instructions are living in the LR
database. If you want to send someone the DNG and have them access the
instructions, you'd want to update that into the DNG using one of the above
commands (I'd recommend you keep the Auto Write XMP preference off if for
anything performance issues).
CR is a bit different. If you click Open, you create a new pixel based
document using the current instructions. If you click Done, the instructions
are saved based on the CR General preferences (XMP or CR database). And/or
you can update the DNG (again, look at the preferences).

I guess so, there's no Save in LR, its updating as you go. You can go back
if you wish but there's no Save as we have in Photoshop.

That's where Virtual Copies come into play. Or you make custom presets of
the settings if you wish (or both). Or the history.
If what you're asking for is multiple rendering instructions pre DNG, its a
good request and hopefully we'll see that in the future.
