To my knowledge, the Preserve CMYK Numbers (Ignore Linked Profiles) option
located under Color Settings > Color Management policies is key.
It's a little convoluted but it works.
You see, when placing image with embedded profiles, the CMYK policy
determines how InDesign honors or discards profiles initially.
Ideally, and that's the default policy, the images should be placed with
that CMYK policy selected. That is, the embedded profiles are used for the
display only but are discarded at print time through the Preserve CMYK
Numbers option in the Color management pane.
But that's not always how people have their Color Settings setup.
So, it's possible to disable all embedded profiles when opening the document
in the Profile or Policy Mismatch dialog. Look under the Placed Content
option and select Disable All Profiles from the menu.
I did a quick test placing an image with SWOPv2 as its embedded profile into
a new InDesign document who's document profile was set to SheetfedCoated,
printed to Postscript, rasterized the result in Photoshop and all CMYK
percentages remained where they should be.
