Do you mean Assign Profile or Convert to Profile ?
Even if it's both, I've found that it doesn't afftect
a
placed AI file in an InDesign document.
Let's try starting a new InDesign document
with ISO FOGRA27 as CMYK Working Space
and Preserve Embedded Profiles as CMYK Policy.
Then place an AI file with US Sheetfed embedded.
When you output the InDesign document,
that AI object will be converted from the
embedded profile to output profile.
Now, change the Policies in InDesign's Policies
to Preserve CMYK Numbers and place the
AI file again. You will find that the CMYK Policy
for that document is still Preserve Embedded
Profiles.
And the only way to change it is to save the
document. Then, go to InDesign Color Settings
change the CMYK Policy to what you want.
Then open the document again and there
you can change the document CMYK Policy
via Profile Mismatched dialogue box.
(RGB Policy is a bit trickier to change if
I remember it right)
