Safe CMYK ?

What's the general consensus on safe CMYK being the default in InDesign and Illustrator CS2 & 3 ?

It appears a little dangerous to me. Especially for those relatively new to colour management who are repurposing CMYK files and assuming they will be converted to the document CMYK when placed in to an InDesign document. It also seems odd that you have to create custom settings to replicate a normal, fully colour managed workflow. Especially when teaching the value of colour management.
