The 2100 is a 8 color inkset. It has the normal array of CcMmYK + lK and Matte Black for matte only media.
The 3100 is a 11 colour , 12 ink printer. The 12th ink is transparent, and applied with a very complex algorithm to control gloss uniformity, bronzing and to some extent slightly les illum metamerism. It is very thin and doesn't alter the height of the printed image.
It is slightly different in it's base , that is it has no pure dark Cyan , rather the lC covers pretty much until offset Cyan and the rest is created with the additional primaries Orange Violet , and Green.
The gamut is quite a bit bigger with the additional primaries, yet surprisingly, these very colours increase gamut in regions additional to the normal Lab shape.
Which is more accurate?
What I can say is the 8 colour inkset is very well suited to any prepress proofing needed. The output of colours in gamut for both printers maintain an appearance near identical despite the ink separations for the 11 colours being vastly different by nature.
In terms of power of imaging closer to what a digital camera will see the 3100 reaches out to areas that were captured before but previously seldom printed. Since the launch of the 11 and 12 colour printers there is no looking back.
