sorry, can't help there, that is a limitation of Windows machines (without the right utility) but not Macs. Macs can handle multiple LUTs per card.
It sounds like your procedure is correct for calibration but perhaps the profiling software is not assigning the profile to each display correctly? When you have the displays in mirrored mode you should go into the 'color' tab for each, select the correct profile and see if that helps.
Also, not all calibration software will bring the screens really close. You may need to experiment with different white point selections when calibrating to get them closer. You could also try ColorEyes Display as it seems to be the one package I have seen get displays closer than the others.
