CMYK is CMYK is CMYK (again)

I have a new printer for a long run narrow-web flexo job - a local house
with multiple Mark Andy's.  They seem very responsive, the work that
they showed me was good, and their quote on the job was way too good to
ignore.  Trouble is, they had trouble with, "Are you color managed?"  I
had to explain the term.

Once again, a printer has asked for files in "CMYK", but unable to
define the term beyond that.  When I pushed the salesperson for more
information, the best he could find out that the presses are run to GATF
standard.  Therefore, my question to the list once again is....

What's the best CMYK profile to convert my RGB files to for a to-the-
standards, GATF Mark Andy?

The last time around (this was an offset sheet press), I settled on U.S.
Web Coated (SWOP) v2, just because it is the out-of-the-box Photoshop
default CMYK, figuring that if the printer didn't know what CM was,
that's where he would be.
