But say I have gone through considerable work developing custom profiles for the contract proof or press. I don't want -- not no way, not no how -- an undesired conversion by the operator.

If the RIP either won't be able to handle embedded profiles properly and/or "chokes" on them, it would require just a minimum of savvy on the operator's part to effect a preliminary conversion of the files to the proper color space for output, save them untagged and then send them to the RIP in that state. It's definitely *not* rocket science. It's very sad that seasoned prepress professionals will refuse to learn those ropes.
