I'd go with a moderately heavy GCR setting (GCR3 in ProfileMaker). I tend to like to start my K generation early - around 10%. If I understand the terminology correctly (and it's gotten pretty tortured) GCR generally refers to replacing CMY with K in all colors. UCR keeps the replacement in the neutrals. It's been demonstrated that GCR extends the gamut of your colorspace. The only reason that I can think of that someone would prefer UCR is if they're afraid that GCR will trash the fleshtones - you know the old "bearded lady" syndrome. I saw this on an HP5500 I was working with.

370% seems too high. What kind of printing process is this?
