An ICC profile contains a good deal more than just a representation of the color output of the press. If all that was in it was the colorimetric A2B table this would be the case, but the perceptual and saturation tables impose color adjustments, and therefore are reasonable targets for editing.

Of course it is possible to arrange a workflow in which the profile is
just used as a characterization of the press and color manipulation
is done elsewhere, but this is not the popular usage.
