AFAIK, channel-by-channel linearization followed by a single matrix
pretty much describes the color processing *in a given light* provided
one neglects things like flare-removal or highlight recovery. How one
determines the linearisation and the matrix for that image is a
different story.
Obviously, ICC shaper-matrix profiles can do the above, provided there
is enough numerical resolution in the processing. ACR-type processing
can also do it.
With a caveat that G1 in a Bayer matrix is not always equal G2 in
terms of colour response; and that the noise in green channels is
usually pretty different.
Dealing with RGBE or RGBW sensors might be a problem here too.
