Good question.
Its very typical to want either one, or the other, or both.
Gray balance (35mm and Point/shoot digital market calls it white
balance like the video market) is the tool for defining this.
Depending on the type of shot, for example, a bridal shot in moms
home, the photographer may well desire the warmth of the tungsten
light. "Correct" gray balance is up to the photographer. If they
click balance on a "gray ref" then say goodbye to the nice warm light
conditions. You will remove the warm light making the shot too "cool"
looking.
now flip this........
walking around through a corp environment doing various "grip and grin
shots" it would likely be a very good idea to use a real gray ref for
consistency as you go from room to room (ie.light source to light
source).
Again, this would (and should be the decision of the photographer
what "gray" is.
