Perhaps you are not using the Epson driver? From the way I've seen this play out on other peoples' machines, the combination of Mac OSXx and Epson printer driver somehow causes certain key settings from not being retained so on a Mac you need to cycle twice through all the setting before printing to make sure that colour management isn't being duplicated between PS and the printer driver, and that the profile you selected remains in place, etc. This problem does not occur with WINXP (I know, because this is what I use). It is something that needs to be sorted out between Epson and Apple.
