Just have them output a profiling target on their proofer in EXACTLY the same way they output their proofs. If this is a one-time thing you only need a profiling target. If this will be an ongoing process, then you might wanna' add a proof verification target, a la ISO 12647-7 (or some such). Then down the road you'll be able to tell if something changes on that proofer.
Create a profile of the proofer. The colorspace of the proofer becomes the assumed colorspace of the files that come from that client. Convert the files from that colorspace (override any embedded profiles) into the colorspace for your production floor.
It's not ideal, but it works well. Besides, it's all you've got.
