It's not as if one has a choice, though. If you are profiling your Epson's output via the driver, you *must* use an RGB workflow.

There may be a bit of confusion here, and correct me if I'm mistaken about that. There are two "workflows" at issue: (1) What color mode to use in profiling (which depends on whether one prints through a driver [RGB] or uses a RIP [CMYK]); and (2) whether or not one uses late-binding (RGB) or early-binding (CMYK).
The two are separate from each other. Whether one uses RGB or CMYK in profiling the device has no bearing on the workflow one uses in editing and preparing one's images for output.
But perhaps that did not need restating.
