But, how to deal with tolerances?

If tolerances were chosen using statistics based on dE76 data, maybe
those tolerances are no longer valid for dE00 data.
The wedge is not connected directly to any tolerances. For proofing
ISO 12647-7 defines the aims which are reflected in the (free of
charge) media standard print. For other reasons (use cases) there
might be different tolerances and better wedges.
