Hi Sean,
My guess is that the root of the problem is in metamerism. That is, the
camera does not see color the same way people see color. More specifically,
the spectral sensitivities of the three camera channels are different from
the spectral sensitivities of our visual system. This results in "seeing" a
different color from the rose.
My other thought is in line with Steve's suggestion of color space. Did you
shoot a JPEG or RAW? If you shot JPEG, then it was probably originally
encoded in sRGB, and even if you change it to ProPhoto RGB later, the damage
has already been done. Better to shoot RAW if this is the case.
I don't think fluorescence, debayer algorithm, or the infra-red filter could
cause the effect you are describing.
If you do manual edits, can you get the red closer to what you expect?
