Preview.app and Adobe Photoshop display images differently

Hi,
I'm trying to figure out why Preview.app and Adobe Photoshop display
the same image differently. My main concern (for the moment) is
getting these two programs to display images consistently when
compared with each other.
The test image in question is a JPEG file with an embedded sRGB
profile; it was produced by Canon's Digital Photo Professional.
Here's what I do:
1. Make sure Preview and Photoshop are both not running.
2. Under System Preferences, select a color profile for my monitor.
(ColorSync Utility confirms that the monitor is the default display.)
3. Open the image in both Preview and Photoshop.
Suppose that in step 2 I pick one of the "default" profiles that came
with my monitor. In step 3, the image looks the same in both
applications. Suppose instead that in step 2 I pick the profile
generated by the monitor's calibration and profiling software. In
step 3, the image looks different in the two applications.
More specifically, when I switch from one profile to the other, the
overall display of my system doesn't seem to change---I believe that
the "default" profile is quite close to the calibrated one. So, the
image's appearance in Photoshop doesn't change. It's Preview that's
displaying the image quite differently when I switch.
I am baffled as to what's going on here. Shouldn't the two programs
always display the same thing, regardless of the profile that's
selected? I'd appreciate any thoughts that people might have here. I
can provide more detailed information upon request.
