No converting never, only assign. You also cannot assign working space profiles as you can not choose them in the Aperture print dialog.

Forget about the "visual" appearance of the targets on the monitor as assign does not change numbers, convert does and that is why you do not want to use convert.

As long as no conversion is going on is what is important. With Aperture you can not turn CM off so you have to use another approach which is to use the same profile for printing as is assigned to the target which results in not conversion.

Assign a printer profile to the target file and send along the same printer profile for your friend to choose in the Aperture print dialog. AGAIN DO NOT CONVERT!

I tested Aperture this morning and it works correctly this way. I have not tested Preview and have no idea whether you can not color manage a target or print with No CM selected in Elements like you can in PS. Maybe someone else can answer that.
