Sounds like your file/extension associations are messed up.
To correct this, do a "Get Info" on both a JPEG and PDF file and change the "Open With:" section to "Preview.app" (or whatever). Click on "Change All..." to make this change apply to all similar files.

Why on earth would you ever want to print something via the ColorSync Utility? That's primarily for rudimentary viewing of an ICC profile and other low-level tasks.
