When you set up your soft-proof (View > Proof Set-Up > Custom Setting, etc, etc), also set up your Info Panel to give you the R/G/B (or C/M/Y/K) readouts for the soft-proof situation by choosing Proof Color as your second read-out. This should give you accurate numbers.
