When using the sRGB settings, you are limiting the monitor to sRGB
gamut, so colors cannot display more saturated then that.
If you are using a wide gamut screen *and* a browser that's not (fully)
color managed, you will see a difference between PS and the browser for
sRGB images, the latter displaying oversaturated.
What browser are you using on your Dell?
You could calibrate the NEC limited to sRGB gamut, but that's kinda
missing the point of using a wide gamut display.
My Eizo does have the option to calibrate to (and switch between)
multiple calibration targets, maybe the NEC as well?
However, the simplest solution (IMHO) is to use a color managed browser.

My question is less about whether there is something 'wrong' with using the settings in Spectraview, and more about WHY is there a difference when I don't have this problem on my wide gamut Dell? Could it be that calibrating/profiling a different way in Spectraview could solve the problem without the user needing to switch settings constantly?
Has anyone tried this?

There is nothing wrong with the presets that come with Spectraview. They're designed to get you to certain sets of colors without your having to manually dial them down.
