Are there any midi sequencer packages available yet under OS X that I can use with my keyboard?

Maybe someone on this list can tell you about that.

Also I have an old MOTU Apple Desktop Bus based Midi time piece. Would it be possible to use this piece of hardware under OS X using a USB->ADB converter?

I think you mean serial. Someone would have to write a driver.

Finally, at WWDC there was a core audio demo given that showed off surround sound. What piece of hardware was used for the multi channel audio out?

Emagic's new blue 6-channel USB box (model number escapes me at the moment).
