There's a whole new suite of APIs for Mac OS X for dealing with these kinds
of issues.
Headers are in AudioUnit.framework and AudioToolbox.framework
The Software Synth is a MusicDevice component (AudioUnit/MusicDevice.h) and
uses DLS or SoundFont as the format for sample data.
Docs, etc, (preliminary form only) can be found at

CoreMIDI also has a concept of a virtual endpoint (source or destination)
that can be used to transfer MIDI data between processes... And, there's
some new and better supported integration between CoreMIDI services and the
AudioToolbox services in Jaguar
