I'm going to throw in my vote on really really disliking knobs! I also don't like controls that don't look like what they do.

I like the idea of a pop-up slider.

Basically I like text fields with a control attached. Maybe a text field with a little arrow in the corner that indicates clicking will give you a drop down slider control.

For the question of circular values, how about a text field for display and an "accelerating" stepper for control.

I really like having all of the controls having enabled-editable text fields for when I know what value I want to put in.

One thing that hasn't been mentioned very much is that meters with pretty colors take up a ton of space. A bunch of the interfaces I see use knobs to save space and then litter the screen with giant meters. I can see why people want to use them but a small control that achieved these goals would be really nice.
