Are there any 5.1 cards, preferably USB or FireWire, available and

The M-Audio Sonica, a USB to S/P-DIF device, will let you output AC-3
to your home stereo decoder via its optical output.
The emagic emi 2|6, a USB device, has 6 outputs which would allow you
to output 6 channels of PCM audio to anything that accepts line level
inputs.
The Yamaha RP-U200, a USB home stereo FM receiver type device, accepts
AC-3 and does the decoding itself (it has 5 speakers and the option of
plugging in a powered sub). However, the current Core Audio and
AppleUSBAudio don't support its AC-3 mode because we don't do VBR AC-3
yet. Only CBR AC-3 is supported at this time (which is what the Sonica
does).
There are a few FireWire devices, like the MOTU 828 that will allow you
to output PCM audio, but I don't know of any accept CBR AC-3 input (but
I'm not really following the FireWire audio side of hardware at the
moment).
What, exactly, are you trying to accomplish?
