We've just updated the SDK contents for Panther to include some useful
things for this:
1. In Public Utility there's a utility file to print out the matrix
mixer volumes - believe me, you will need this!
2. We've also added the demo that James did at WWDC
- this is quite neat - it gives you an app that has a couple of
inputs, output, cross point volumes, metering on each point and (in a
playful spirit) a way to randomise all the settings...
We're in the process of doing docs, and will try to get the most
pertinent information into the panther SDK. (or email possibly)

I think the plan is actually to update these pieces on Jaguar
systems as well - I can confirm this for you shortly
I'd recommend that you use the MM if at all possible - we spend alot
of time optimisting this (and it also does metering :), and you can
get both panning and down-mixing volumes from the AudioFormat API -
all in all, it saves you alot of work
