We've just updated the SDK contents for Panther to include some useful things for this:
1. In Public Utility there's a utility file to print out the matrix mixer volumes - believe me, you will need this!
2. We've also added the demo that James did at WWDC
- this is quite neat - it gives you an app that has a couple of inputs, output, cross point volumes, metering on each point and (in a playful spirit) a way to randomise all the settings...

We're in the process of doing docs, and will try to get the most pertinent information into the panther SDK. (or email possibly)

I'd recommend that you use the MM if at all possible - we spend alot of time optimisting this (and it also does metering :), and you can get both panning and down-mixing volumes from the AudioFormat API - all in all, it saves you alot of work
