Jeremy,
It currently does two things:
1. If the synth is using an internal reverb (which is the default)
then the quality setting is passed on to the reverb.
2. In the lower quality modes, notes are terminated a bit earlier in
their release phase, allowing higher polyphony, taking less CPU,
but potentially introduces very low-level clicks, or not sounding
quite as smooth in the release phase.
For AudioUnits in general, the kAudioUnitProperty_RenderQuality
property trades off CPU usage for sound quality. In particular, the
DLSMusicDevice, AUMatrixReverb,
and the converter unit currently implement the property in the Apple
AudioUnits.
