It would be nice if Apple's DVD player allowed for DD and DTS pass
through. Where basically the DVD player just passes the encoded
audio stream to a hardware device that will then send it to a
receiver for the decoding. I know a few of the M-Audio consumer
devices (
http://www.m-audio.com/products/consumer/index.php) have the
ability to do this they just need to get the steam form somewhere.
They had an old version of VLC that they modified to support this but
I don't know if it ever made it into the standard VLC distribution.
This would finally make using a Mac as a home theater PC a
possibility.

AFAIK It is not possible. I would think that Apple does not have a 5.1
decoder license for their DVD player (_really_ expensive for an add-on
application like the DVD player in Mac OS X)
Getting a little OT here, but does this mean it is unlikely that there would
be a 3rd party solution? Even if a little expensive, it might be cheaper
than buying a separate expensive screen to play DVDs if you were already
thinking of buying one of the big Apple LCDs. If not it certainly reduces
the chance I will ever buy a big Apple LCD!
